The nitrogen that tap water carries, intermixed in the chamber (19) with the hydrogen (14 a xxx n) and oxygen (18 a xxx n). It is what makes the flame controlled: the nitrogen reduces the burning velocity and the temperature of the hydrogen so the flame (25) can be sustained.
